Mediterranean Breakfast Bagel

Tuesday Treats

There is no denying I'm savory over sweet, so it's probably not a surprise that I would prefer my breakfast to look like something from a Spanish table. They are also casual in their morning rise..... so maybe my ancestors are really from Spain? or Portugal? I like salt, wine, and sleep..... I'm like a wine-drinking rabbit.... if it were to exist.....


Here's my breakfast of choice (and I never eat breakfast until 11am or later.... It's like I've always done that diet where you fast for 16 hours and eat only in an 8-hour window.... so I know that diet doesn't work for me because I've done it my whole life....  and well..... here I am.....not skinny......so on to the food..... the Mediterranean Breakfast Bagel......... 


5 simple ingredients:

*Bagel of your choice, toasted (plain, everything, sesame, onion, or poppy seed work best here)

*Cream cheese: Veggie, chive, or plain (I prefer the veggie)

*Capers

*Fresh sliced tomatoes (I love the Roma tomatoes)

*A sprinkle of finishing salt (my new obsession is Lawry's garlic salt with parsley- just don't tell my Magg's.... she rats on me to my cardiologist and then I get that high blood pressure "salt lecture")


After the bagel is toasted, spread the cream cheese, add some capers, tomato slices, and a sprinkle of the finishing salt if you prefer.... and voila! Paired with a warm cup of coffee or tea.....
